  • Eggplants should be started indoors, if possible, 8-10 weeks before the last frost. They require highly fertile, well-drained soil. Covering tray or seedling pots with plastic, will help retain moisture and increase germination. Transplant outdoors when soil temperatures reach at least 60 degrees F. Harvesting can begin about 8-10 weeks after sowing.

  • Frequent harvesting encourages more production. Do not let eggplant fruit to overgrow. Seeds are smaller and less visible during peak edible time.
